“I wake up early this morning to take okras from the garden,” says Coumba. Coumba explains how to make a recipe from okra. “We grow okras in the garden, installed thanks to the support of World Vision,” she says.
Coumba’s kitchen
“I cook most of the time outside, here in the open air,” Coumba Diouf says. It is morning when Coumba starts start to cook a dish she likes and she is able to make thanks to the garden she planted with the help of the garden project of World Vision.
The sophisticated kitchens in the western countries are different from the ones in Tattaguine. To start the fire, Coumba use energy saving techniques, using a small paint container filled with threshed millet sticks (like corn stocks).
The lack of firewood has developed spontaneous thinking and creativity among the woman when it comes to using alternative sources of energy. These smart and energy-saving techniques are encouraged by World Vision.
Ingredients to Make the Recipe for 6 People:
3 onions
½ Glove of garlic
1 kg (2 Lbs.) of Okra
1 hot pepper
3 small fish
1kg (2 Lbs.) of rice
1 big tomato
½ Palm Oil
Cooking Rice in One Pot
Boil water in a cooking pot.
While you are waiting for the water to boil, wash the rice in a separate bowl.
Once the water is boiling, add the rice in the cooking pot and cook for about 30 minutes.
When the rice is well mixed with the water in the cooking pot and it becomes a sticky paste, It’s now ready to go with the sauce.
Cooking the Sauce in a Second Pot
Cut the okras in small slices, then wash them.
Boil water. When the water is boiling, Add the okra in the cooking pot and let it boil fiercely about 30 minutes.
Once the okra is boiled, add the other ingredients: tomatoes, fish, stock (a bullion cube), crushed garlic and onions and let it boil again for another 20 minutes.
Add the palm oil in the pot and leave it for 20 minutes to cool.
After about 20 minutes, the sauce is ready. You can mix the sauce together with the rice and enjoy your meal.
